This spiced apple pie porridge tastes of Christmas, so you have to try it during the holidays. The spiced apples and sultanas will remind you of mulled wine and Christmas markets, and the excitement that some of us feel when Father Christmas is expected to visit us.

One of my go-to breakfasts is porridge, it’s not a secret. It is a great way to start the day because it is packed with nutrients. I like to play with the toppings and spices and this one hits the flavour mark.

I love to make spiced apple pie porridge when I can’t wait for the Christmas period to be official.

Porridge is super easy to make and this one genuinely tastes like Christmas. Come November, I always start to make it to console myself of the cold weather outside, and mentally prepare for mulled wine and all the decorations to come.

Making the Apple Pie Porridge

First you need to cook the apples. Peel them to enjoy the smooth texture, add the spices and honey, and leave on the hob for a few minutes, until the apples have started to go soft.

Once they’re ready, mash half of them to make them compote-style, and sweeten the porridge naturally. Reserve the rest to add on top of the porridge when it’s ready.

To make the porridge, add the oats and milk and water to the mashed apples, and cook on a low heat, stirring regularly. The trick is to take it off the heat before it looks ready – don’t wait until it looks dry.

Once the porridge looks creamy and smooth, take it off the heat, pour the mixture in two bowls and top with the apples, more sultanas and you can add a spoonful of coconut yoghurt.

Spiced Apple Pie Porridge

This spiced apple pie porridge tastes like Christmas, perfect to enjoy during the period leading to the festivities

Ingredients
  

  • 70 g rolled oats
  • 1 tbsp honey
  • 3 apples peeled and cubed
  • 40 g sultanas
  • 300 ml almond milk unsweetened
  • 50 ml water
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • pinch grated nutmeg

Instructions
 

  • Put the apples in a medium saucepan with the honey, cinnamon, ginger and nutmeg over a low heat.
  • Cover and cook for about 5mn, until the apples are soft. Add a splash of water if it looks dry.
  • Once the apples are soft, set aside 1/2 of the mixture, and mash the rest in the pan using a wooden spoon.
  • Add the oats, milk, water and sultanas to the apples, and cook for 7-8mn, or until the oats reach your desired consistency.
  • Divide between two bowls, top with the remaining apples and more sultanas, and why not a dollop of coconut yoghurt.
