My 5 Favourite Healthy Barbecue Recipes for Summer

We all love a barbecue in the summer, so here are my favourite healthy barbecue recipes to make when you want meat alternatives and lots of veggies to cool down. 

There is something special about having your meals outside. It instantly gives me a feeling of freedom, and I’m bare-foot in the grass with a glass of something cold in my hand. Can you feel it too? 

I have been to many barbecues and usually I find myself between the bag of crisps and aaaall the meat. Don’t get me wrong, I love crisps. But they’re not the staple I’d like to have if I want to feel great. 

So now I bring these healthy barbecue recipes that everyone loves, and it changes the food landscape – at least mine. 

Peach and Burrata Salad

There is something about burrata that makes me go soft. Maybe it’s the creamy and oozing heart of cheese. Combined with peaches and a balsamic glaze, this is your next go-to salad this summer. 

Ingredients : (serves 4)

100g rocket salad

1 big burrata

4 nectarines 

Balsamic cream / glaze

3 tbsp olive oil

50g pine nuts

Wash the nectarines thoroughly, then slice them.

In a big dish, assemble the rocket leaves, the sliced nectarines, and cherry tomatoes. Pour the olive oil and mix well. 

Place the burrata on the salad. 

Squeeze the balsamic glaze like on the picture, until it’s well spread out. 

Sprinkle with pine nuts, season to taste, and enjoy. 

Broccoli and Almond-Stuffed Mushrooms

I love a big Portobello mushroom. Sometimes I use it as the meat alternative in a bun with lettuce and sauces, but now I love it this way: 

Ingredients: (to stuff 4 Portobello mushrooms)

4 Portobello mushrooms

1 small broccoli head

A bunch of fresh basil

1 tbsp grain mustard 

3 tbsp olive oil

1 tbsp nutritional yeast 

50g almonds

On a barbecue grill, lay the mushrooms head down and grill for 10 minutes. 

In a blender, whizz and reduce the almonds to a coarse mix. 

Cut the broccoli head in small pieces, chop the basil. Add them both to the blender with the nutritional yeast and the mustard. Pour the olive oil, and blend until you get a paste. 

Once the mushrooms are cooked, spread the broccoli and almond mixture on the mushrooms to stuff them. 

Fennel and Avocado Salad

This salad is earthy, cooling and so easy to put together. Make it in advance and relax on the day.

Hummus is a staple in our house, I like to always have one batch in the fridge. Whip up this dip in less than 5 minutes and watch everyone tell you how much they love it.

Strawberry Frosé

Trust me, you want to try this recipe. 

Ingredients: serves 6

400g of frozen strawberries

1 bottle of rose wine 

1 lime

2 fresh strawberries, sliced

In a powerful blender, combine all the ingredients – adjust the quantity of wine to your liking, I like to pour 75% of the bottle and reserve the rest for another day – and blend on high. 

Make sure it is thoroughly mixed before serving. Add a a slice of fresh strawberry to serve. 

Healthy Barbecue Recipes Round Up

Whether you are a meat lover or focussing on your plant-based diet, a barbecue can always accommodate everyone, at least in my book. I eat meat occasionally but here vegetables have pride of place, like in all of my meals.
