Banana Bread Basics

A banana bread is basically a cake that you make with bananas, you could have guessed that. There are two ways you can make it: wit sugar and butter, or you can twist it and make it with more wholesome ingredients that will be kind to your heart and waistline. 

A banana bread recipe calls for ripening bananas and is a great way to use these bananas you haven’t eaten and are looking a bit sorry in the fruit bowl. The ripening process also means that their sugar content is naturally increasing. 

Thanks to the natural sugar of the fruit, you don’t need to add much sugar in this recipe, which makes it the perfect snack in my books.

A Healthy Banana Bread Recipe

When I bake, I tend to avoid ingredients like white sugar, butter, white flour, which can all have a bad impact on your health when consumed regularly. 

So I turn to natural sugars like fruits, maple syrup or honey, to nut butters with no sugars or oil in it, and to oats instead of flour. 

There are more swaps that I make but these would be my basics and in this recipe, this goes from a cake that you would eat moderately, to an item you can eat for breakfast and not crash your energy or cholesterol levels. 

And because I love chocolate and nuts, I’m adding both in it with chocolate chips and walnuts.

Step by Step

Preheat your oven to 180*. 

First grind the oats into a fine flour in a blender or food processor. Add the ripening bananas and make sure that it is well combined, and then you can keep following the recipe by mixing with the blender, or you can mix it by hand in a bowl. 

Add the peanut butter, the maple syrup to sweeten just a little bit more, the non dairy milk and the vanilla extract. Combine it all together. 

Then add almost all the chopped walnuts and chocolate chips, reserving some of them to put on the “bread” before cooking. 

Line a loaf tray with parchment paper, pour the mixture into the tray and add the reserved walnuts and chocolate chips on top. 

Put the loaf tray into the oven for 50 minutes, and leave to cool once it’s ready. It will be gooey and perfectly sweetened. This really is the best pick-me up or breakfast when you’re looking for something sweet.

The Perfect Healthy Banana Bread Recipe for Breakfast

This healthy banana bread recipe is a great way to use ripening bananas and can be eaten for breakfast or mid-day thanks to its low sugar content.

Cook Time 50 minutes

Ingredients
  

  • 3 very ripe bananas
  • 2 cups oats gluten free optional
  • 1/3 cup almond butter
  • 1 cup non dairy milk
  • 1/2 tsp vanilla extract
  • 1/4 cup coconut oil melted
  • 1 tsp chia seeds
  • 2 flax eggs
  • 1 tsp baking powder
  • 1 cup chopped walnuts
  • 1/2 cup chocolate chips optional

Instructions
 

  • Preheat the oven to 180*.
  • To make the flax egg, mix 2 tsp flax seeds with 4 tsp water. It will form a thick paste. Rest aside for a few minutes.
  • Blend the bananas in a food processor. Add the rest of the ingredients apart from the chopped walnuts to the food processor. Blend until smooth.
  • Add the chopped walnuts and combine manually.
  • Line a loaf tray with parchment paper and pour the mixture in it. Add some whole walnuts to decorate. I like to add chocolate chips as well.
  • Bake in the oven for 50mn, or until a knife comes out clean.
