Salmon Recipe, Anyone? 

I have to be honest: I don’t eat much fish or meat, simply because I tend to eat a lot of plant-based foods every day and the need for anything else is limited. 

But I do like fish or meat when they’re well prepared and bursting with flavours. Just the other day I had some carefully prepared barbecued beef just to try, even though I had warned the host that I was rarely eating meat (I knew I wasn’t going to offend her as well). It was an even bigger compliment to the chef that day that I was tempted 😉 

Back to our salmon, when I first made this one, I had to make it again and again. If you like Asian cuisine, you know that the flavours of soy and ginger were made for each other. 

Ginger has great anti-inflammatory properties, so when you can add it to your meal like that, it’s just a win-win. 

Salmon is high in omega 3 which also makes it an inflammation-fighting warrior. And did I mention the garlic? This recipe is basically your best friend for the winter that’s coming. 

In winter, colds and viruses are free-flowing and a lack of sunshine exposure makes you more vulnerable to them. So this soy and ginger salmon recipe is also here to reinforce your immune system !

Quick Dinner 

Not only is this recipe delicious, it’s also really quick to make. I had never cooked salmon in a saucepan like this and now I wonder what I’ve been doing. 

You only need to put all the sauce made of orange juice (real one, freshly pressed), soy sauce, minced garlic and ginger, and heat it up. Once it’s bubbling, add the salmon filets to the pan, cover with a lid for three minutes on each side, and you’re done. 

I mean, it doesn’t get any simpler than that right? 

So grab your saucepan, your ingredients, and make this fabulous dinner when having friends over or even for an at-home date night, and everyone will be delighted.

Soy & Ginger Salmon Recipe

Ingredients
  

  • 250 g salmon filets (
  • 1 fresh orange juiced
  • 2 tbsp soy sauce
  • 1 garlic clove minced
  • 10 g ginger peeled and grated
  • 1 tbsp runny honey
  • 200 g pak choi
  • 1 courgette peeled in long strips
  • 1 cup basmati rice
  • 1 tbsp miso paste
  • 1 tbsp olive oil
  • 1 chili, to decorate

Instructions
 

  • Cook the rice according to package instructions with the table spoon of miso paste. It will give the rice a deep umami flavour.
  • Heat the olive oil in a frying pan, add the courgette slices and pak choi, and stir from time to time.
  • In a large saucepan, where both salmon filets will comfortably hold, and for which you have got a lid, combine the orange juice, soy sauce, grated garlic and ginger. Bring to a simmer – it will reduce by half, in about 3 minutes. 
  • Put both salmon filets in the pan, cover with the lid and cook for 3 minutes. Then turn the salmon over, and cook for another 3 minutes, until it's cooked through. 
  • Slice the chili, discard the seeds if you want to moderate the heat.  
  • Drain the rice once it's cooked. Divide the pak choi, courgette strips and cooked rice into two plates, place a salmon filet on each. Scatter the chilli over the vegetables. 
  • Stir the honey into the rest of the sauce in the pan, and spoon the sauce over the filets. Enjoy !
