How to Make a Vegan and Healthy Eggnog this Christmas

What is an Eggnog? 

Traditionally, an eggnog is a drink that you make around Christmas time, and is a sort of milk punch. It’s based off milk, eggs, sugar, cream, all the things that are rich and sweet, but not the healthy kind. 

So I decided to try a healthier alternative because as much as I like Baileys at Christmas, I can’t have that much dairy. And the vegan Baileys is just not the same. 

So I am thrilled to have tried that recipe and I will probably make it on repeat this Christmas.

Method for a Vegan and Healthy Eggnog

You will need coconut milk from a can – if the top is hard you can pour the cream and the water into the blender, it will mix together. You will also need a good dairy-free milk, with no added sugar. 

I like to use real maple syrup to sweeten my food and baking – it’s so good and is better for you than white or brown sugar.  For spices, nothing says Christmas like cinnamon and nutmeg. 

Traditionally eggnog is made with bourbon, dark rum or cognac. But because a few people at home or in my friends don’t drink alcohol, you realise quickly that a lot of things don’t necessarily need alcohol. But when I do drink, I want something that I like. 

I think a coffee liqueur or Amaretto are the perfect addition to this non-traditional vegan and healthy eggnog. 

Put all the ingredients together in a blender, apart from the alcohol, if you are using any. Blend well for about 20 seconds. Pour the mixture in a saucepan and bring to a simmer. 

Get off the heat and let it cool. Add the alcohol if you are using any. Sprinkle some more nutmeg on top for decoration. 

You can serve the eggnog cold or hot.  It will keep for up to 4 days in a closed container like a glass bottle.

Vegan and Healthy Eggnog

Ingredients
  

  • 1 can coconut milk
  • 3 cups almond milk
  • 1/4 cup maple syrup
  • 1 tbsp vanilla extract
  • 1 tsp cinnamon powder
  • 1 tsp nutmeg plus extra, to decorate
  • 4 shots Amaretto or coffee liqueur if using

Instructions
 

  • Place all the ingredients in a blender, apart from the alcohol. Blend well for about 20 seconds.
  • Pour the mixture into a saucepan and bring to a simmer. Leave to cool, or serve hot, with the alcohol if you are using it.
  • It can be kept in the fridge for up to 4 days in an airtight container.
