If you are looking for a new dinner recipe that’s easy to make and delicious, you are in the right place. This sweet potato and rocket salad is an easy dinner recipe and effortlessly increases your intake of vegetables, in a delicious way. It’s my other half’s creation and I love it so much that I had to share this recipe with you. 

Easy Dinner Recipe

If there is one thing that I love, it’s a quick and easy dinner. After a day of work, I just want to start dinner and get ready for the evening, and relax. 

I usually only make dinner in under 30 minutes, or at least that cooks for a bit longer but is easy to put together in less than 10 minutes. 

I have heard so many times people saying that they’re not eating healthy because they don’t want to spend two hours in the kitchen every evening – neither do I ! But I just know that to feel good, satisfied and no wanting to go back to the cupboard after dinner for snacks, I need a healthy and nourishing meal. 

So let’s get cooking.

Sweet Potato as Comfort Food

Is it just me or does the sweet potato has that texture and taste of comfort food? It’s sweet and gooey, when baked with a drizzle of olive oil and salt it tastes a bit naughty. But it’s so healthy ! 

Full of antioxidants, fibre (think filling and good digestion), vitamins and minerals, sweet potatoes are the perfect addition to your diet. 

You just need to cut it in little cubes, sprinkle salt, pepper and other spices – I like ginger, cumin, paprika – drizzle with olive oil and after 40 minutes in the oven, they’re a delight. And yo can go and do something else while they bake. 

You can also cut them into fries and dip them into the sauce of your choice once done. They’re a great alternative to chips ! I promise they’re THAT satisfying.

Salad for Life

The rest of this recipe calls for only great ingredients: ripe avocado, juicy green olives, rocket (love that peppery taste), hummus and nuts if you like it. 

It all comes together really well and will count towards your 7 a day (yes, let’s aim for more than 5 a day, and try a variety of things!)

The only “sauce” we add is a drizzle of sesame oil to increase the nuttiness. You have to try.

Rocket and Sweet Potato Salad

This rocket and sweet potato salad is perfect for easy dinner recipe and will effortlessly increase your intake of vegetables, in a delicious way.

Ingredients
  

  • 2 medium sweet potatoes
  • 100 g rocket leaves
  • 75 g green olives
  • 1 avocado
  • 2 tbsp hummus
  • 2 tbsp sesame oil
  • 2 tbsp olive oil
  • 3 tbsp roasted nuts
  • salt and pepper
  • 1 tsp ginger, powder
  • 1 tbsp cumin, powder
  • 1 tbsp paprika, powder

Instructions
 

  • Preheat your oven to 200*C.
  • Cut the sweet potatoes into cubes. Lay them on a baking tray, sprinkle salt and pepper, ginger, cumin and paprika on the sweet potatoes. Drizzle the olive oil, and then mix it all together so they’re evenly coated. Bake for 40 minutes. 
  • Prepare the salad : divide the rocket between the plates, add the olives, the avocado cut in cubes. Add a dollop of hummus on the side of each plate. 
  • Drizzle the sesame oil on the salad, add some salt if liked. 
  • Once the sweet potatoes are cooked, pile them on top of the salad, add the nuts. You can mix to all together if you like.
