If you’re looking for a cookie recipe that does not contain any butter, look no further. This vegan peanut butter and chocolate cookie recipe will satisfy any sweet cravings, and is on the healthy side.
Healthy Treats Baking
Traditional cookie recipes are usually 1/3 butter, 1/3 flour and 1/3 sugar, which is basically the opposite of ideal for your health or your waistline !
But eating healthy does not mean that you have to say goodbye to tasty recipes or comfort food. You just need to find the right swaps and the combinations that work. And very (not so much) humbly, I think I’ve nailed this one.
Once you start becoming familiar with the healthy swaps for baking, you’ll always have the right ingredients at home like nut butters, coconut oil, sugar alternatives like honey, maple syrup, dates.
Vegan Cookies
In this recipe, the traditional butter used to make the cookies gooey and tasty, is replaced by peanut butter and coconut oil. They give these little delicacies the right texture without compromising on the taste.
I love peanut butter and mixed with a chocolate flavour is one of my favourite combos. Almond butter would work well as well here, but I don’t always have it in my pantry because it’s more expensive and less available in the shops in big quantities.
Making the Little Treats
For the oat flour, I simply take some rolled oats and blend them into a fine flour. If you are gluten-free, make sure to select oats that are certified gluten-free. Even if oats naturally don’t contain any gluten, they’re usually handled in warehouses that handle gluten-full items so you want to be careful if that’s important to you.
I used agave syrup in this recipe because I usually have this or maple syrup at home, but honey will do here as well if you’re not vegan.
Mix everything together in a bowl, it might require a bit of elbow grease but it’s worth it. Then add the chocolate chips – more is always best in this case – and form little balls on a baking tray.
I made 12 small cookies but you could make them bigger and increase the baking time by 2 minutes.
10 minutes in the oven, they’ll be just browning and if you can be patient, let them cool for 15 minutes. Enjoy !

Vegan Peanut Butter Chocolate Cookies
Ingredients
- 150 g oat flour
- 1/3 cup agave syrup
- 1/3 cup peanut butter
- 1/4 cup coconut oil melted
- 1 tsp vanilla extract
- 1 tsp baking powder
- 2 tsp chia seeds
- 1/2 cup chocolate chips
- salt
Instructions
- Preheat your oven to 180*.
- Mix together the oat flour, chia seeds, baking powder and a pinch of salt.
- Add the agave syrup and peanut butter, mix well. Add the coconut oil and the vanilla extract, mix it all together until well combined.
- Add the chocolate chips, making sure they're everywhere.
- Form little balls with the cookie dough and arrange them on a baking tray; flatten the balls slightly with a spoon or fork.
- Bake in the oven for 10 minutes. Once done, take the cookies out of the oven and let them cool for 15 minutes. Enjoy !
