Rocket and Sweet Potato Salad
This rocket and sweet potato salad is perfect for easy dinner recipe and will effortlessly increase your intake of vegetables, in a delicious way.

- 2 medium sweet potatoes
- 100 g rocket leaves
- 75 g green olives
- 1 avocado
- 2 tbsp hummus
- 2 tbsp sesame oil
- 2 tbsp olive oil
- 3 tbsp roasted nuts
- salt and pepper
- 1 tsp ginger, powder
- 1 tbsp cumin, powder
- 1 tbsp paprika, powder
Preheat your oven to 200*C.
Cut the sweet potatoes into cubes. Lay them on a baking tray, sprinkle salt and pepper, ginger, cumin and paprika on the sweet potatoes. Drizzle the olive oil, and then mix it all together so they’re evenly coated. Bake for 40 minutes.
Prepare the salad : divide the rocket between the plates, add the olives, the avocado cut in cubes. Add a dollop of hummus on the side of each plate.
Drizzle the sesame oil on the salad, add some salt if liked.
Once the sweet potatoes are cooked, pile them on top of the salad, add the nuts. You can mix to all together if you like. Enjoy!
