The Perfect Healthy Banana Bread Recipe for Breakfast
This healthy banana bread recipe is a great way to use ripening bananas and can be eaten for breakfast or mid-day thanks to its low sugar content.

- 3 very ripe bananas
- 2 cups oats gluten free optional
- 1/3 cup almond butter
- 1 cup non dairy milk
- 1/2 tsp vanilla extract
- 1/4 cup coconut oil melted
- 1 tsp chia seeds
- 2 flax eggs
- 1 tsp baking powder
- 1 cup chopped walnuts
- 1/2 cup chocolate chips optional
Preheat the oven to 180*.
To make the flax egg, mix 2 tsp flax seeds with 4 tsp water. It will form a thick paste. Rest aside for a few minutes.
Blend the bananas in a food processor. Add the rest of the ingredients apart from the chopped walnuts to the food processor. Blend until smooth.
Add the chopped walnuts and combine manually.
Line a loaf tray with parchment paper and pour the mixture in it. Add some whole walnuts to decorate. I like to add chocolate chips as well.
Bake in the oven for 50mn, or until a knife comes out clean.
