The Perfect Healthy Banana Bread Recipe for Breakfast

This healthy banana bread recipe is a great way to use ripening bananas and can be eaten for breakfast or mid-day thanks to its low sugar content.

Ingredients
  

  • 3 very ripe bananas
  • 2 cups oats gluten free optional
  • 1/3 cup almond butter
  • 1 cup non dairy milk
  • 1/2 tsp vanilla extract
  • 1/4 cup coconut oil melted
  • 1 tsp chia seeds
  • 2 flax eggs
  • 1 tsp baking powder
  • 1 cup chopped walnuts
  • 1/2 cup chocolate chips optional

Instructions
 

  • Preheat the oven to 180*.
  • To make the flax egg, mix 2 tsp flax seeds with 4 tsp water. It will form a thick paste. Rest aside for a few minutes.
  • Blend the bananas in a food processor. Add the rest of the ingredients apart from the chopped walnuts to the food processor. Blend until smooth.
  • Add the chopped walnuts and combine manually.
  • Line a loaf tray with parchment paper and pour the mixture in it. Add some whole walnuts to decorate. I like to add chocolate chips as well.
  • Bake in the oven for 50mn, or until a knife comes out clean.
